Our view

As a semi-sparkling dry white wine our Pigno is an excellent alternative for those with a discerning taste looking for an alternative to prosecco. Fermentation

Cryomaceration technique initially, whereby the crushed grapes are held at low temperature prior to fermentation in order to develop the flavour. Fermented at a controlled temperature in steel casks and subject to a secondary fermentation process (‘Metodo Martinotti’ – Charmat method) whereby the wine is placed in sealed pressure tanks and a mixture of yeast and sugar is added to induce the second fermentation.

This ‘Charmat’ method is the very best process for making sparkling wines from aromatic grape varieties like pignoletto.
